Sugar Free Lemon Curd



115 grams Butter
80 grams Sweetnz Premium Blend
½ cup lemon juice
¼ cup lemon zest
6 drops Sweetnz Lemon Stevia
6 egg yolks. . ( If you are also making the meringue you will have a supply of yolks)


In a saucepan put the butter, Premium Blend sweetener, lemon stevia, lemon juice and lemon zest and stir until the sweetener has dissolved.

Remove from the heat and leave for just a minute or two to allow the mixture to cool slightly, then whisk in the egg yolks (a little at a time is best) and return to the stove over low heat
Stir continually until the curd starts to thicken and coats the back of a spoon.

Remove from the heat, strain into a glass jar and let cool to room temperature then store in the fridge for up to one month.
