Sugar Free Meringue Base



6 Egg whites (If you are also making the lemon curd you will have a supply of egg whites)
60 grams Sweetnz Icing (not) Sugar
1 Tblsp White Vinegar
1 tsp Cream of Tartar


Preheat your oven to 100˚C
Whisk egg whites in a very clean and fat-free bowl until they are light and fluffy.
Add Icing (not) Sugar a little at a time and whisk well between each addition, then whisk for 1 extra min.
Add Vinegar and Cream of Tartar and whisk again for another minute.
Put on a tray lined with wax paper (I make a small indent in the middle to allow for the cream filling).
Bake for 1 1/2 - 2 hours.

Leave oven when done, with the oven door slightly ajar to allow it to cool completely.
