Pumpkin Pie Spiced Porridge



2 level tablespoons coconut flour (almond flour can also be used)
2 level tablespoons golden flax meal
3/4 cup water (1 cup if you like a thinner porridge)
pinch of salt
½ teaspoon pumpkin pie spice
1 large egg, beaten
2 teaspoons butter or ghee
1 tablespoon heavy cream or coconut cream
1 tablespoon Sweetnz Golden Brown sweetener
3 drops of Sweetnz Vanilla Stevia drops
2 tablespoons cooked pumpkin - mashed


Measure the first five ingredients into a small pot over medium heat and stir. When it begins to simmer, turn it down to medium-low and whisk until it begins to thicken.
Remove the coconut flour porridge from heat and add the beaten egg, a little at a time, while whisking continuously. Place back on the heat and continue to whisk until the porridge thickens.
Remove from the heat and continue to whisk for about 30 seconds before adding the butter, cream and sweetener, stevia drops and mashed pumpkin.
Garnish with your favourite toppings and coconut cream. I used pumpkin seeds and goji berries. (5.6 grams net carbs)

Note: You can also use classic or premium blend to sweeten this porridge, just cut down a little on the blend sweetener and add an extra drop or 2 of Caramel Stevia to create that brown sugar flavour. When adding stevia drops always add one at a time and taste as they are very concentrated.
