Ingredients
For the Loaf:

2 ½ cups Almond Flour (super fine)

¼ cup Coconut Flour

½ cup Sweetnz Monk Fruit Blend Not Sugar

1 tsp Baking Powder

½ tsp Baking Soda

¼ tsp Salt

3 Large Eggs (room temperature)

½ cup Sour Cream (or Greek Yogurt for a tangier loaf)

¼ cup Melted Butter (or Coconut Oil)

2 tbsp Lemon Zest (approx. 2 lemons)

¼ cup Fresh Lemon Juice

1 tsp Vanilla Extract

2 tbsp Poppyseeds
For the Sweetnz Glaze:

½ cup Sweetnz Icing Not Sugar

1–2 tbsp Fresh Lemon Juice (add slowly until you reach your desired consistency)
Instructions

Prep Your Oven: Preheat your oven to 170°C. Grease a standard loaf pan and line it with parchment paper for easy removal.

Mix Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, Sweetnz Monk Fruit Blend, baking powder, baking soda, salt, and poppyseeds. Ensure there are no large clumps of almond flour.

Whisk Wet Ingredients: In a separate medium bowl, whisk the eggs, sour cream, melted butter, lemon juice, lemon zest, and vanilla until smooth.

Combine: Pour the wet ingredients into the dry. Fold together gently with a spatula until just combined. Don't overmix, as coconut flour absorbs moisture quickly!

Bake: Pour the batter into your prepared loaf pan and smooth the top. Bake for 45–50 minutes. (Pro Tip: If the top is browning too fast, loosely cover with foil at the 30-minute mark).

The Toothpick Test: The loaf is done when a toothpick inserted into the center comes out clean. Let it cool in the pan for 15 minutes before transferring to a wire rack.

Glaze It: Once the loaf is completely cool, whisk your Sweetnz Icing Not Sugar and lemon juice together. Drizzle generously over the loaf and let it set for 10 minutes before slicing.
Baker’s Note: Because we use Sweetnz Icing Not Sugar for the glaze, it won't feel "gritty" like some other sugar-free icings. It dissolves beautifully into a smooth, tart finish that perfectly balances the sweetness of the loaf.
