Berry and Lemon Curd Pavlova

First you will need to make the Lemon Curd and Meringue base.

When you have the meringue and lemon curd made here is how to put it all together:

 

Berry and lemon curd pavlova by Sugar Free Food NZ

 

Ingredients:

300ml Cream
Sweetnz Vanilla Liquid Stevia

Method: 

Whip 300 ml of cream until thick and add approximately 8 drops of Sweetnz Vanilla Stevia and whisk just a little to incorporate.
Taste, and add a few more drops of Stevia if you like it a little sweeter and give it another mix to incorporate again.
Then carefully mix through ½ - ¾ of the lemon curd from our recipe into the cream so that there are still big streaks of the lemon curd in the mix, ie just a very quick mix.
Add the cream and curd mix onto the meringue.
(Adjust the amount of lemon curd you put in according to your taste, you may want to use the whole lot, but I'm sure you'll find something to do with any leftovers!)

Decorate with berries of your choice.
